I found this recipe online at sheknows.com – it’s a sugar cookie that when you break it open, has a candy surprise inside, mimicking a Mexican pinata. I thought this was such a creative idea that I just had to try it out!
My bestie, Samantha threw a Cinco de Mayo-themed birthday party for her 5-year-old daughter yesterday so it was the perfect opportunity to see how these cookies would pan out. Here are some pictures of the results:

All in all, the cookies were a big hit. The only modifications that we would suggest is to:
- Add more sugar to the sugar cookie recipe. We found that the cookies could have been a tad sweeter.
- Use a simple cookie cutter shape. The donkey cookie cutter we originally used was too detailed so when we cut the cookies, it caused them to crumble when assembled.
