If you plan on staying in you can never go wrong with a home-cooked dinner for two! Last year I made this delicious dinner for my Valentine, and he loved it!
Panko Crusted Halibut
2 8-ounce fillets of halibut
¾ cup panko bread crumbs
1 egg beaten with 1 tbsp water
1/2 Tbsp garlic salt
½ tsp pepper
½ tsp paprika
2 lemon slices for garnish
Combine bread crumbs garlic salt, pepper and paprika. Coat fish in egg then in bread crumbs mixture. Pan Fry fish in olive oil until light brown. Place the fish on a rack over a flat baking sheet, for oil to drain while in oven. This gives you a crispy fish that won’t be swimming in oil. Preheat oven to 450°F. Roast fish until just opaque in center, about 8 minutes.
Steam your favorite vegetables and serve as a side. You can try steaming some broccolini, carrots and zucchini. Sauté them in some minced garlic and butter for some oomph!
Serve this with a bottle of Sauvignon Blanc or White Chardonnay.
Now if you are planning to cook up a meal for your friends, you can double or triple this recipe. You can prep this meal by just frying the fish and not baking until you are ready to serve! Enjoy this dinner with good friends, a great comedy and/or a fun board game.
Don’t forget the dessert! Some delicious chocolate dipped fruit and a bottle of Moscato Wine Yummm!
